We have been planning since the winter to welcome importer Didier Boutet back to Chez Nous to present an impressive & delicious all-organic wine tour of France. Please join us to enjoy Didier’s presentation of these wines which he has personally selected through his many relationships in France to highlight the best of today’s natural winemaking trends.

Vinobles Dampt Cremant de Bourgogne n/v
Most cremants from Burgundy are made from Chardonnay but this one is almost entirely Pinot Noir! Domaine Chevrot farms its organic vineyards in and around the village of Maranges in the Cote de Beaune and is in the process of becoming fully biodynamic as well. The Chevrot family has been making wine in Burgundy since 1830. This cremant speaks of the terroir of Maranges!

The wines from the Graves appellation of Bordeaux, more specifically the villages of Cerons, take their name from the deep river gravels that cover the plateau of the region. This gravel, combined with sand, clay and limestone, contribute to the unique character of the wines and the presence of minerality. 70% Semillon and 30% Sauvignon Blanc make up the blend, with the Semillon being fermented in barrel. The result is an opulent, yet delicate, white Bordeaux. Historically, Chateau de Seuil has always had a preference for organic viticultural techniques and in 2009 they converted to certified organic.
FUN FACT – Queen Elizabeth II personally knows the owners and drinks the wines at Buckingham!

Laurence and Marc Pasquet acquired this Plassac property in 1990 and this bottling is a collaboration of their 2 hillside vineyard parcels, Gazin, facing directly south and Mondesir, overlooking the Gironde estuary. The cepage is 80% Merlot and 20% Malbec, aged 12 months in barrel and 6 months in concrete vats. This estate is completely certified organic. This is charming right bank Merlot at is finest, right across the Gironde from St Julien.

The Rousset-Rouard family owns and runs this estate, located in the northern reaches of the Luberon, gateway to Provence. Winemaker Alexis Rousset-Rouard farms 65 distinct high elevation parcels, all organically farmed at 300m. The cool climate north of the Luberon mountains yields an aromatic complexity associated more with the northern Rhone. Cepage is 70% Syrah and 30% Grenache with 12 months of aging in oak.

Domaine Cauhaupe Jurancon Moelleux Symphonie de Novembre 2014
Domaine Cauhape is located in the lovely obscure wine region of Jurancon in the Aquitaine on pastoral southeast facing slopes. They are protected by the Pyrenees on the east and moderated by the Atlantic ocean on the west. The climate is ideal for the indigenous local varieties of Gros and Petit Manseng. Petit Manseng is frequently left to become overripe and raisiny on the vines, to produce the deliciously elegant Jurancon Moelleux. The Romanteau family is considered the benchmark estate of the region. Symphonie de Novembre is harvested in the month of November, hence the name, and is 100% Petit Manseng, aged 10 months in barrel and 6 months in vat.

Join us this Thursday for an exploration of Sous Vide cooking!  Sous Vide is a modern cooking technique that has 3 characteristics, each of which developed separately.  They are: low-temperature cooking, containerized cooking that separates the food from its heating environment, and pressurized enclosure using full or partial vacuum.  We will be preparing elements of each course sous vide:  A “Perfect” Egg in Leek & Potato Soup; Red Wine Braised “Sous Vide”; and Melting Rhubarb with Lemon-Thyme Sorbet.

Our uber-modern new French team wants to show you all one more modern technique, something fun and just as surprising as last weeks’ sous vide night:  working with an ISI canister to make different creams, foams and sauces.  The menu will feature a Scallop Mousseline, followed by Salmon with a Hollandaise Foam, and then Chocolate Mousse.  Some lovely Loire wines to go with it and then we’ll see you in the fall for more MBED nights.  As always, $35 for food, wine, recipes and a cooking demo.  Call for reservations; the online system doesn’t do special events!

Each evening will be devoted to a different non-profit organization with 15% of the night’s net profit given directly to support their work in our community

Please join us for our Community Nights this winter. Each week we will partner with a local nonprofit to highlight their cause. While we have always partnered with local organizations with different donations, including cooking classes, Chef for a Day, or gift certificates for dinner, recently we have been thinking about how to integrate our work more directly with the community that has supported us for almost 14 years. We are looking forward to giving back by doing what we do best, feeding people!

Here is what you can do to help: bring your friends and family and enjoy an evening out while supporting a good cause. It’s a great combination. In addition, everyone who attends to support Community Night will have their names entered into a raffle for a chance to win a dinner for 2 at one of our popular wine dinners!

For this week’s Manger! Boire! Eat! Drink! meal we will explore the area of the Southern Rhone in France known as the Costieres de Nimes.  Between the low rocky hills and garrigue that mark the border of the Languedoc with Provence, and the low sandy plain of the Camargue in the Rhône delta, the Costieres de Nimes is a relatively newly-recognized region (1989 made AOC) and the soil is mostly a mixture of round pebbles (“galets”) similar to Chateauneuf du Pape, and sandy alluvial deposit and red shale. The climate is Mediterranean, similar to that of the Rhône valley, but is characterised by its proximity to the coast and the sea breezes.  Along with some delicious wines from the region we will feature a menu with a choice for appetizer, House-made Fromage de Tete – or- a classic Salade Lyonnaise with a poached egg, garlic croutons, and red wine jus.  This will be followed by a roasted filet of Mediterranean sea bass with Cotes du Rhone Sauce, and a traditional dessert for January in France, La Galette du Rois, almond cake with poached pears.

As always, wine, food, recipes & a cooking demonstration will be $35. excl tax and tip.  Please call for reservations rather than using the online system.  We hope to see you there!

As per tradition, one winter night we focus on fun and delicious ways to make satisfying meals using no animal products at all: a 100% vegan menu.  We know everyone will enjoy a Stuffed Portobello Mushroom with Quinoa, Walnuts & Caramelized Onion, followed by a surprising, rich and delicious Vegan Shepherd’s Pie, and for dessert and Orange-Carrot Cake with a Creamy Frosting.  As always, wine, food, recipes & a cooking demonstration all for $35. excl tax and gratuity.  Please call (413)243-6397 to make reservations; avoid the online reservation system which gets cranky when everyone tries to come at the same time!
