Join us this Thursday for an exploration of Sous Vide cooking! Sous Vide is a modern cooking technique that has 3 characteristics, each of which developed separately. They are: low-temperature cooking, containerized cooking that separates the food from its heating environment, and pressurized enclosure using full or partial vacuum. We will be preparing elements of each course sous vide: A “Perfect” Egg in Leek & Potato Soup; Red Wine Braised “Sous Vide”; and Melting Rhubarb with Lemon-Thyme Sorbet.
