		<description>Dear Mr. Morss, Thank you so much for sending me your post about wine dinners.  It&#039;s definitely an interesting perspective and I&#039;m glad to have read it (as someone who hosts many more wine dinners than she attends!).  It seems, though, that we have planned exactly the type of wine dinner that you DON&#039;T like!  We are working with a distributor who provided us with a list of flavor profiles for each wine that he has selected to feature.  We made our menu based on these profiles, in hopes of creating a pleasing pairing for the guests between the wine and the food for each course, progressively creating a logical and balanced manu.  What I love about these types of dinners is how, when the pairing with a particular wine and a particular dish is on the mark, it just elevates the guest in a kind of indescribable way ( I say this because I witness it, and occasionally experience it myself when I have a great pairing, but mostly it&#039;s the mood in the dining room, the smiles on the guests&#039; faces, that&#039;s how I know that we&#039;ve gotten it right!).  And then, you&#039;re right, it&#039;s abrupt to then completely switch gears and move on to another wine and another flavor profile with a new dish, but that&#039;s what we have planned to do (and have done in the past; I&#039;m interested to try a different kind of dinner/menu structure w/ your views in mind, but it would have to be for another time.)  Let me know if you&#039;re reconsidering joining us on the 24th.  We really didn&#039;t consider any kind of comparisons between the wines themselves, they&#039;re very different, and while we&#039;d be happy to pour all of the wines for you to taste throughout the menu, it isn&#039;t how we&#039;d calibrated the dishes for this particular meal.
